🇲🇦 WHAT IS SHAKSHUKA?
A dish with roots in North Africa and loved throughout the Middle East, Shakshuka is a rich, delectable sauce consisting of tomatoes, peppers, onion, garlic, and olive oil. Seasonings can include herbs, cumin, paprika, cayenne and/or harissa. The shakshuka sauce is then topped with poached eggs, garnished with parsley and served with crusty bread or pita. Other variations call for preserved lemons, feta, olives, or spicy sausage—such as chorizo or Merguez.
For our Easy Vegan Shakshuka, we omit the egg, add mushrooms for a meaty bite, and chickpeas for protein. Crumbled non-dairy feta and chopped parsley top off the dish, while crusty bread sops up the saucy goodness. Shakshuka is truly one of the great breakfast/breakfast-for-dinner dishes from around the world. In our book, it’s right up there with huevos rancheros, dim sum, or tortang talong!

Mina Shakshuka Sauce allows us to have the bold flavors of Morocco on our table in mere minutes. It is vegan, all-natural and contains no sugar or preservatives. Cooking authentic shakshuka from scratch can take up to one hour. This includes prepping the onions and garlic, chopping the tomatoes and peppers and waiting for the flavors to come together in the pan. But thanks to Mina Shakshuka Sauce, we can enjoy an authentic shakshuka in about 10 minutes from start to finish!
🔪 HOW TO MAKE THIS RECIPE
- Brown the mushrooms in olive oil, about five minutes.
- Add the chickpeas and heat through for one minute.
- Add Mina Shakshuka Sauce and bring to a simmer, about four minutes.
- Top with non-dairy feta and parsley and enjoy!

EASY VEGAN SHAKSHUKA
Ingredients
- 1 tablespoon extra virgin olive oil preferably Mina Single Origin Moroccan Extra Virgin Olive Oil
- ½ cup baby bella mushrooms sliced
- Pinch of salt
- ½ cup chickpeas drained
- 1 16- oz jar of Mina Shakshuka Sauce
- Vegan feta cheese to serve
- Parsley chopped, to serve
- Crusty bread to serve
Instructions
- Heat olive oil in a pan over medium heat. Add mushrooms, sprinkle with a pinch of salt and sauté until golden brown—about 5 minutes.
- Add chickpeas and heat through—about 1 minute.
- Add Mina Shakshuka Sauce and simmer for 4 minutes.
- Top with vegan feta cheese, chopped parsley and crusty bread. Enjoy!
