Our Vegan Chipotle Taquitos are spicy, zesty, wholesome and loaded with crunch! We lighten things up by air frying instead of traditional frying.
Our taquitos are perfect for game day snacking or as a whole meal, and you can whip them up in 30 minutes or less! They are also great for a quick and crunchy weeknight meal.
🇲🇽 WHAT ARE TAQUITOS?
Taquitos are a Mexican dish consisting of corn tortillas that are stuffed and then rolled and fried. Fillings can include things like beans, cheese, or meat. They can either be dipped or topped with condiments such as salsa or guacamole. Other fun toppings can include things like crema (Mexican sour cream), lettuce, queso fresco (crumbly white Mexican cheese) or cilantro. You can eat them as a snack or as an entire meal.
As a side note, you might see taquitos labeled as “flautas” (Spanish for “flute”) on a menu. Technically, flautas are made with flour tortillas, but the two names are often used interchangeably in practice.
For our non-traditional vegan take on taquitos, we spice up a jackfruit & black bean filling with chipotles in adobo. We lighten things up by air frying our taquitos.

💡 RECIPE TIPS
- You can use flour tortillas: We love using corn tortillas for this recipe, but you can totally opt for flour tortillas if you want. Just note that you’ll need to use more filling to stuff flour tortillas, and as a result, the recipe will yield less taquitos (or in this case flautas, technically).
- You can fry your taquitos: If you don’t have an air fryer, you can go the more authentic route and shallow or deep fry your taquitos. We recommend using a neutral oil for this cooking method.
- Topping options: We top our taquitos with guacamole, cilantro, vegan queso fresco, and Valentina hot sauce. We also like to serve them with lime wedges. Feel free to mix and match your toppings! Vegan queso fresco can be harder to find (we use this brand), but you can use vegan feta instead (not traditional but easier to find).

VEGAN CHIPOTLE TAQUITOS
Ingredients
- 1 tablespoon neutral oil plus more for brushing
- 2 14-oz cans jackfruit sliced, large seeds removed
- 1 14-oz can black beans drained
- 2-3 chipotles in adobo minced
- 2 tablespoon chipotles in adobo sauce (from the can)
- 1 small onion diced
- 4 garlic cloves minced
- ½ teaspoon dried oregano
- 1 teaspoon vegan chicken bouillon paste or substitute 1 vegan chicken bouillon cube (optional)
- 16 corn tortillas
- Salt to taste
- Freshly cracked black pepper to taste
Suggested toppings:
- guacamole
- cilantro
- vegan queso fresco
- lime wedges
- Valentina hot sauce
Instructions
- Heat oil in a skillet over medium meat. Add onion, sprinkle with salt to help draw out the liquid, and cook until translucent. Add jackfruit and oregano. Cook until jackfruit and onions are golden brown. Add garlic and cook until fragrant, about 1-2 minutes.
- Add chipotles + chipotle sauce, bouillon and black beans, and cook for 5 mins. Adjust seasoning. Remove from pan.
- Heat up tortillas on pan for a few seconds on each side to make them pliable and to prevent them from breaking when rolling up your taquitos.
- Fill tortillas with 2 rounded tablespoon of filling and roll up, placing them in one layer, seam-side down in your air fryer. Depending on the size of your air fryer, you may need to cook the taquitos in batches. Air fry for 400°F for 10 minutes. If your air fryer has stackable racks, the top rack will brown first, so cook the bottom racks an additional 2 minutes to crisp up on top.
- Remove taquitos with tongs. Top with topping and enjoy!
