These Vegan Beer Brats are our take on this delicious German staple, just in time for Oktoberfest! So pour yourself a hefeweizen, whip out the sauerkraut and dig in. Prost!
🇩🇪 WHAT ARE BEER BRATS?
A bratwurst is a traditional German sausage made of beef, veal, and/or pork. They are usually boiled, then grilled or pan-seared. In German brat means finely chopped meat, while wurst means sausage. The first mention of bratwurst comes from the German city of Nuremberg.
A beer brat is simply a bratwurst which has been boiled or marinated in beer, then grilled or pan-seared. The beer adds an extra depth of flavor to the sausage which makes, in our humble opinion, takes it to a whole other level. Seriously, there are few pairing in this world as perfect as beer brats, beer-braised onions, and German mustard. Just make sure the mustard is extra scharf—that’s extra sharp for all non-German speakers. Our favorite brand of German mustard is Löewensenf Extra.
So although Oktoberfest may have been canceled this year, it doesn’t mean you can’t still add a little Deutschland pizzaz to your next dinner party or game day cookout!
💡RECIPE TIPS
- There are a ton of vegan sausages on the market that work for this recipe, but our absolute favorite is Beyond Meat’s Brat Original. Another vegan sausage we like for this recipe is Incogmeato’s Original Bratwurst.
- We recommend marinating your brats in a beer that has a good amount of flavor and body. So no crappy, mass-produced American beers. Get that Bud-Light trash outta here!

Vegan Beer Brats
Ingredients
- 3 bottles vegan-friendly beer plus ½ cup beer (divided)
- 4 vegan bratwurst
- 1 ⅓ tablespoon extra virgin olive oil
- 2 medium onions sliced thinly
- Salt to taste
- 1 teaspoon organic granulated brown sugar
- 4 vegan hot dog or hoagie buns
To serve:
- German-style mustard (we love stone ground or spicy mustards; our favorite brand is Lowensenf!)
Instructions
- Marinate bratwurst in beer: Pour 3 bottles of beer in a resealable container, add bratwurst, and cover.
- Make beer-braised onions: Heat olive oil in pan over medium heat. Add onions, sprinkle with salt to draw out the water, as well as brown sugar to speed up caramelization. Cook onions until they are golden brown. Then add ½ cup of beer and braise until onions are caramelized.
- Grill bratwurst: Pat bratwurst dry and grill to desired level of doneness. Then toast buns. Serve beer brats in buns with mustard and beer-braised onions. Enjoy!
