Level up your boring avocado toast with our Miso Mushroom Avocado Toast. Topped with furikake, it’s the umami-packed toast with the most!
Believe us, after sinking your teeth into our Japanese-inspired take on this breakfast classic, you’ll never go back to plain old toast with avocado. We start by making a simple compound butter with white miso paste. Then we brown sliced mushrooms in our miso butter, toast up the bread, and rub a garlic clove over the bread. After that, we layer on the sliced avocado and miso mushrooms, and then top with furikake. The result is equal parts rich, earthy, salty, sweet, and nutty. It’s a literal flavor explosion on toast!
🇯🇵 WHAT IS MISO PASTE?
Miso paste is made from fermented soybeans. Miso paste is earthy, rich and salty-sweet. The longer the paste ferments, the darker in color and more complex in flavor it becomes. We like to use white miso paste, the lightest color, to make our miso butter. White miso paste is the mildest in flavor, and does not overpower the buttery richness of the avocado. You can find miso paste at most grocery stores. We’ve found it in stores such as Kroger, Sprouts and Whole Foods. Otherwise, you’ll definitely be able to find it in your local Asian grocery store.
📝 INGREDIENTS
- Unsalted vegan butter: To make our compound miso butter and infuse our mushrooms with richness. We recommend using unsalted butter to better control the salt content in our finished dish.
- White miso paste: To make our compound miso butter and infuse our mushrooms with salty-sweet umami.
- Mushrooms: Earthy and meaty, mushrooms are sponges that sop up our miso butter. You can use any variety of mushrooms you like. In our case, we used baby bella mushrooms.
- Garlic clove: You haven’t truly lived if you haven’t rubbed a fresh garlic clove over toast! The rough surface of the bread will shred the garlic like a grater.
- Sliced bread: You can’t make avocado toast without bread!
- Avocados: Add buttery richness to our toast.
- Furikake: Furikake is a Japanese seasoning mixture that contains sesame seeds, dried seaweed, salt and sugar. It adds a savory, nutty, seafood-y flavor. There are many seasoning mixtures that contain fish or egg, so check the ingredient list to ensure it is vegan. Note: Make sure to avoid mixtures including ingredients such as bonito flakes, katsuobushi and okaka, which are derived from fish and are not vegan. You can find furikake at your local Asian grocery store or online.
🔪 STEP-BY-STEP INSTRUCTIONS

Make the miso butter: Combine cold vegan butter with the miso paste in a small bowl. Mash the mixture together with a fork until silky and uniform. Set aside.
- Cook the mushrooms: Heat a pan over medium heat. Add the miso butter. When the butter melts, add the mushrooms and cook, stirring frequently, until the mushrooms are nicely browned and caramelized (around 5 minutes).
- Toast the bread: Toast the bread to your desired level of doneness. We prefer toasting the bread longer than we normally would, so that it is sturdy enough to hold up to the avocado and mushrooms. Then rub a garlic clove vigorously over the surface of each slice. The rough surface of the bread will shred the garlic like a grater.
- Assemble the toast: Layer the sliced avocado over each slice of toast. Then layer the miso mushrooms over the avocado, and sprinkle furikake over the top of the toasts. Enjoy!
💡 RECIPE TIPS
- Use cold butter: You want your compound butter with miso to be silky and evenly combined. To achieve this, bring your vegan butter up to cold. This will make it easier to cream it together with the miso paste. DO NOT microwave the butter. Microwaved butter will not bind with miso paste, and you’ll wind up with yucky, unappetizing clumps of miso paste.
- Whisk or fork it up: Use a whisk or fork to cream together your miso paste with room temp butter.
- Save the avocado for last: Slice up your avocado just before you assemble your toasts. This will minimize browning (i.e. oxidation).
