Our summer watermelon salad is a tangy and refreshing way to beat the heat. It’s the perfect light and juicy side dish for your next summer barbecue.
🍉 WHAT IS A SUMMER WATERMELON SALAD?
Our summer watermelon salad is an international textural playground consisting of watermelon, Asian pear, and jicama, tossed in minty lime juice and agave nectar dressing. The key word here is textural. When it comes to food, great texture—in our humble opinion—is one of the most overlooked, yet important, traits of a successful dish.
Watermelon is hands down one of our favorite fruits. By “our” we mean all three of us—including our crazy pug Mango. It’s not just the delicious flavor and unmatched juiciness of the watermelon that does it for us—although those are absurdly divine on their own. Rather, there is something so light and refreshing about the crispy texture. So naturally, this got us wondering what other fruits share a similar texture?
This is how we landed on Asian pears and jicama. And although they’re from opposite sides of the globe, these two ingredients pair perfectly with the fresh crispness of the watermelon. We add a squeeze of lime for acidity, agave nectar for sweetness and some sliced mint for freshness, and bada-bing bada-boom, you have the perfect summer fruit salad.
💡RECIPE TIPS
- After you assemble your salad, we suggest refrigerating it for at least one hour (overnight if you can have the time), to let all the flavors meld.
- Before serving, garnish with extra mint and finish with a squeeze of lime for some added tang.
