These Vegan Beer Brats are our take on this delicious German staple, just in time for Oktoberfest! So pour yourself a hefeweizen, whip out the sauerkraut and dig in. Prost!

Ingredients
  

  • 3 bottles vegan-friendly beer plus ½ cup beer (divided)
  • 4 vegan bratwurst
  • 1 ⅓ tablespoon extra virgin olive oil
  • 2 medium onions sliced thinly
  • Salt to taste
  • 1 teaspoon organic granulated brown sugar
  • 4 vegan hot dog or hoagie buns

To serve:

  • German-style mustard (we love stone ground or spicy mustards; our favorite brand is Lowensenf!)

Instructions
 

  • Marinate bratwurst in beer: Pour 3 bottles of beer in a resealable container, add bratwurst, and cover. 
  • Make beer-braised onions: Heat olive oil in pan over medium heat. Add onions, sprinkle with salt to draw out the water, as well as brown sugar to speed up caramelization. Cook onions until they are golden brown. Then add ½ cup of beer and braise until onions are caramelized. 
  • Grill bratwurst: Pat bratwurst dry and grill to desired level of doneness. Then toast buns. Serve beer brats in buns with mustard and beer-braised onions. Enjoy!
