VEGAN ARGENTINIAN CHORIPÁN

It’s grilling season. Our Vegan Argentinian Choripán is the perfect way to level up your grill game with some Latin flavor!

These sausage dogs are a popular street food across South America, and they are sure to be your new favorite hot dog! Grilled chorizo sausages are housed in baguettes or hoagie rolls, and then slathered in tangy, herbaceous chimichurri sauce. And you know what? You can whip these bad boys up in just 30 minutes!

WHAT IS CHORIPÁN?

The choripán is a sausage dog popular popular in South America. The name “choripan” is a mashup of the dish’s ingredients: grilled chorizo sausage and crusty bread (or pan in Spanish). But the secret ingredient in choripán is the chimichurri sauce, which is an herby condiment similar to Italian pesto. 

Choripán originated in Argentina, where it is an iconic street food. It is also popular in other South American countries like Uruguay and Chile, but choripanes have also made their way into Central American stomachs in Costa Rica as well. 

For our vegan take on choripán, we use vegan sausages. The choice of which vegan sausage to go with was an issue. The vegan equivalent of Argentinian-style chorizo, which is similar to Spanish chorizo, is difficult to find here in the US. Mexican-style chorizo is readily available, but it is a totally different flavor profile. Mexican chorizo is typically seasoned with vinegar and chili peppers, while Spanish chorizo is made with garlic and paprika.

 In a nutshell, Spanish chorizo is smokey, while Mexican chorizo is spicy. We opted for a more neutral-flavored sausage to let the flavors of the chimichurri shine, so we went with Beyond Meat bratwurst. But you can use any vegan sausage your little herbivore heart desires. 

Note: Our recipe makes a lot of chimichurri sauce, because well…we love chimichurri sauce! We highly recommend serving your choripánes with plantain chips, which are perfect for sopping up that extra sauce.

  • Vegan sausages: our vegan protein substitute
  • Hoagie rolls or baguettes: to house our vegan sausages
  • Garnishes: Roma tomato and onion
  • Chimichurri sauce: the secret ingredient to our sausage dogs

HOW TO MAKE THE BEST VEGAN ARGENTINIAN CHORIPÁN

  1. Make the chimichurri sauce: Blend together all the ingredients for the sauce and season with salt and pepper, to taste.
  2. Fire up the grill: Grill the sausages and toast the bread.
  3. Assemble: Places the sausages in the bread, spoon the chimichurri sauce over the sausages, and top with tomatoes and onions. Enjoy!

Ingredients

For the Chimichurri Sauce:

  • 3/4 cup parsley
  • 1/2 cup red wine vinegar
  • 12 large garlic cloves
  • 1/2 cup fresh oregano
  • 1 tbsp red pepper flakes
  • 1 cup olive oil
  • Salt & pepper, to taste

For the Choripanes:

  • 4 vegan sausages (we like to use Beyond Meat Italian sausages)
  • 4 hoagie rolls or 2 baguettes
  • 1 Roma tomato, diced
  • 1 small onion diced

Instructions

  1. Make the chimichurri sauce: Buzz up all the chimichurri ingredients in a food processor and season with salt and pepper, to taste.
  2. Fire up the grill: grill sausages to desired level of doneness. Split the sausages in half lengthwise if desired. Toast the bread on the grill. 
  3. Assemble: place the sausages in the buns (or baguettes), generously spoon chimichurri over sausages and then top with tomatoes and onions. Enjoy!
