VEGAN ARGENTINIAN CHORIPÁN

Ingredients
  

For the Chimichurri Sauce:

  • ¾ cup parsley
  • ½ cup red wine vinegar
  • 12 large garlic cloves
  • ½ cup fresh oregano
  • 1 tablespoon red pepper flakes
  • 1 cup olive oil
  • Salt to taste
  • Freshly cracked black pepper to taste

For the Choripanes:

  • 4 vegan sausages we like to use Beyond Meat Italian sausages
  • 4 hoagie rolls or 2 baguettes
  • 1 Roma tomato diced
  • 1 small onion diced

Instructions
 

  • Make the chimichurri sauce: Buzz up all the chimichurri ingredients in a food processor and season with salt and pepper, to taste.
  • Fire up the grill: grill sausages to desired level of doneness. Split the sausages in half lengthwise if desired. Toast the bread on the grill. 
  • Assemble: place the sausages in the buns (or baguettes), generously spoon chimichurri over sausages and then top with tomatoes and onions. Enjoy!
